At first glance, you are working with way too many CV's. Yes, the more CV's the smoother and more control you have of the object, but it is also harder and sometimes more confusing to manipulate. try not to rebuild too much until you are ready to render the image or take a glance at it smoother.
Here is our very first attempt. It looks like a bird from the front, but we lost our toolbar so we couldn't really rotate it...(help!)
